You should have a feature that allows you to select a word and then change the color of that single (or multiple) word. When you roll over the actual text and the box turn orange, and then you click on it and the box turns black, that black box or tool would be a good place to add a color picker.
Currently, when you're in that black tool, you can select a single word, make it bold, or add a link. If you added a color picker to that black box, then you could also change the color of whatever was selected.
I've used several other platforms and they all have that feature.

It would be great to keep the font the same weight and change colors of some text. Right now we have to make the font bold to change the color which doesn't always help with readability.

Change the color of only part of the text in a text block like headline/ sub-headline / paragraph element? Whenever I try to highlight only part of the text and change the color, it changes the color of all the text in that block.

Yes, there's often need for part of some text/headline to be a different color, not just one normal text color and one bold text color

I think the solution here would have to look like WP where they have a small editor popup for every text element - would also to include bullets, etc.
